FLUID Coffee Bar: A Coffee Experience

FlUID Coffee Bar, located in downtown Valparaiso, is one of my favorites for a number of reasons; number one being the high-quality coffee they serve. Also, I love the laid back, artistic, friendly atmosphere.

Warning:  You can easily lose track of time engaging in chit-chat with owners Chuck and Alison Scates, the baristas, and other coffee drinkers.  It’s encouraged.

The Coffee
FLUID is a Third-Wave coffee bar (I won’t pretend that I initially knew what that meant) “ the Third Wave references the current movement within specialty coffee that appreciates coffee as an artisan or craft beverage. Coffee, in all of its processes, from the origin of the harvested bean to the roasting and brewing process, is treated with the same reverence as fine wine and craft beer ” https://www.craftbeveragejobs.com/the-history-of-first-second-and-third-wave-coffee-22315/

“There’s a big focus on the quality of the coffee over anything else”

— Chuck

Intelligentsia is the roaster for FLUID. They’re the largest small batch roaster in Chicago.  They have an exemplary reputation for product quality due to their meticulous old school values and practices.  Intelligentsia works directly with farmers all over the world, monitoring growing methods every step of the way, ensuring every bean is up to standard;   Chuck and Alison share these same values, and Direct Trade is especially important to them. Therefore, they’re extremely proud of their partnership with Intelligentsia. https://www.intelligentsiacoffee.com/learn-do/community/intelligentsia-direct-trade

Pour Over “Many feel that coffee is coffee, however, coffees from various countries such as Burundi, Kenya, and Columbia all have different flavor notes. During each pour over, the consumer is given a note card to read during the pour.  It encourages you to look for the different flavor notes in the coffee while sipping, basically teaching you to become a coffee connoisseur”                               -Chuck

They’re incredibly passionate about coffee and have a wealth of knowledge.  Learning the backstory of the love and labor put into my coffee before it even hits my lips greatly enhanced my appreciation for the Mocha Latte I was sipping during my conversation with them.

My favorite latte so far would be the FLUID Latte.  It consists of espresso, milk, fluid syrup, cloves, cinnamon, and spices.  The combination is on point!  If you’re in the mood for a little heat, maybe try the ‘Vale of Paradise’: a double shot of espresso, handcrafted honey, cayenne pepper, lemon syrup, and topped with milk. It’s SPICY! YUM!

You can also get Nitro cold brew on tap. Unlike hot brew through a machine where hot water is poured over grounds to extract the flavors over the course of a few minutes, the cold brew process brews anywhere from an eighteen to twenty-four hour period slowly extracting everything out of the coffee. The results are a super rich high caffeinated concentrate to which filtered water is added to taste. I always take cream and sugar in my coffee, but I had the Nitro black, and I liked it.

Atmosphere:
Adding to the excellent coffee is the atmosphere.  Everything from the vinyl playing through the speakers, the works of local artists lining the walls, to the lighting, set a cozy mood.  The owners wanted their spot to be different while showcasing a true mix of both of their styles and personalities.

“Fluid is like our living room opened up to the public”

— Alison

I usually park myself in the “Chill Room” in the back of the bar.  It’s a great spot to relax and catch up with friends.  If you’re alone and in the mood for conversation, you can always take a seat at the counter and hang out with the baristas.

 Chill Room Chill Room

I’ve observed the interactions of the owners as well as the baristas with customers on several occasions. They enjoy what they’re doing. Customers walking in are greeted by name as if they’ve known them for years.  They ask questions about their work, families or just engage in everyday chit-chat. They’re genuinely happy to see them; they know exactly how they like their lattes or take their coffee.  If you’re a first timer, don’t worry, they’re patient and helpful with recommendations and questions are always encouraged.

It truly is a feel good place. It’s more than a coffee bar; it’s an experience.

You’ve been warned; you’ll love this place and get lost in the good feeling

Outdoor Adventures in the Indiana Dunes

Here’s a glimpse of some of the outdoor adventures at the Indiana Dunes! There’s much activity to enjoy in every season.

Where will you start?

Albano’s Pasta Shop: Simple, Focused, Rustic Italian

I discovered Albano’s pasta shop while visiting Running Vines Winery for a tasting. Distracted by the glorious smells of garlic permeating the air, I curiously stepped next door to check things out (After the writing of this article, Albano’s Pasta Shop moved from it’s Chesterton location. The new address is 22 Washington St., Valparaiso)

Inside, chef and owner Nick Albano was making handmade pasta in preparation for the next night’s opening. He took a few minutes to tell me about himself and his restaurant.

Nick prepares everything from the bread to the cheese and sausage in-house.  That’s quite impressive.  He also spends 2 days a week selecting fresh ingredients from farms in Michigan, Illinois, and parts of Indiana.  Consequently, the Menu, which is about seven items long, changes weekly.

Albano’s specializes in straight-forward, focused, rustic style, Italian cooking. There’s usually no more than 3-4 ingredients in each dish.  As a result, the dishes burst with identifiable flavors! “When you’re using the freshest ingredients, you don’t need to do much to it.”-Nick Albano

“I don’t want to put something on the menu with 20 ingredients and goopy sauce dumped over it. It’s about simplicity…..”

Favorite Menu Items From Albano’s Pasta Shop

Everything is amazing at Albano’s Pasta Shop! Trust me, I’ve pretty much eaten the whole menu several times.   Must haves are the Bacon Wrapped, Chorizo Stuffed Medjool Dates, Sweet Potato Ravioli, Fusilli, and Parsnip Tortellini. I’ve also tried gluten-free versions of the dishes that I recommended and I could NOT tell the difference. The flavors are very clean with each dish component highlighted and the pasta texture is perfection.

Nick has been cooking since the age of 12 and is extremely knowledgeable about his craft.  Also, he’s trained under some of the great chefs of Chicago such as Charlie Trotter and Paul Kahan.
I’m so excited that I stumbled upon this wonderful restaurant.  My family, I have become regulars!  You seriously need to stop in at Albano’s Pasta Shop.  You can thank me later!

Things to keep in mind:
•    Albano’s is closed on Sundays and Mondays
•    The entire menu can be subbed gluten free (on demand only, call one day ahead)
•    They offer carb free pasta

At Home in the Woods Bed and Breakfast

Hospitality is defined as the friendly and generous reception and entertainment of guests, visitors, or strangers. At Home in the Woods Bed and Breakfast is an excellent example of hospitality.

Owner’s Scott and Victoria want their guests to be comfortable, relax, and enjoy their home as if it were their own.

Lovers of travel and nature, Scott and Victoria opened the national park themed bed and breakfast in 2008.

The home, nestled in the woods, is surrounded by nature and wildlife.  Guests can stroll the trails, observe animals at play, watch birds feed, or, if preferred, spend the day around the pool and hot tub.

Each morning visitors can expect a gourmet breakfast including fresh baked breads, fresh fruits, berries, and homemade cobblers, depending on the season.  Victoria has over 20 year’s culinary experience and can accommodate any dietary restriction.

The Phillips have hosted guests from all over the world including, England, Germany, Finland, the Netherlands, Nigeria, Uganda, Cape Town South Africa, and Switzerland.

“I was not expecting to have people from all over the world inside my home, it’s almost surreal”

— Scott, Co-Owner

It’s easy to see that Scott and Victoria love what they do and experience many rewards for their hospitality including making lasting connections with new friends.  I can attest to this as my family and I had the privilege of hosting 3 visitors from New York whom we’d never met, this past December.  They entered our home as strangers and left as friends.

If you’re visiting the Indiana Dunes area and want to experience a different stay while being spoiled in an intimate cozy setting, give At Home in the Woods Bed and Breakfast a try.

Indiana Dunes Camping: Peaceful and Beautiful Surrounding

Indiana Dunes camping is both relaxing and enjoyable!  I love the memories we’ve created with friends and family on our trips there.  There’s usually anywhere from 7-10 families that camp with our group.

While camping, life slows down. It’s so relaxing and calming to me. I most look forward to morning conversations over a cup of coffee and a fire. It’s also lovely to hear children playing, laughing, and exploring throughout the day. They make up the funniest games, lol. Unplugging and deepening the connections with those we love is rewarding.

I believe campers are some of the friendliest people you’ll ever meet. Everyone walking around the campground greets others as they pass. They may say a quick hello or stop for a conversation. Besides, fellow campers also readily offer help when needed.

The Indiana Dunes Campground is one of my favorite places to camp not only because of it’s scenic beauty but also because of the nature center situated at the rear of the campground. It allows guests to learn a bit about their surroundings.

Sometimes I can be a lazy camper. Being within the picturesque Dunes, however, I often find myself hiking the trails and climbing dunes several times throughout the day. The multiple paths have various levels of difficulty for walking, jogging, hiking, and biking. If you’re up for a fitness test, you can attempt the 3 Dune Challenge, a self-guided trail climbing the three tallest dunes in the park. Besides the trails, there’s also swimming at the lake and beach volleyball.

Keeping Active During Winter Helps Minimize the Blues

Winter tends to make me sluggish and lazy.  I just want to lie around, eat, watch TV, and never leave the house.

Whenever I give in to those feelings however, I’m miserable and bored.  After a particularly difficult winter several years back, I resolved that in the future,  I’d just embrace the season and stay as active in the cold weather as I am the rest of the year.  For the past few winters I’ve actually been doing outside activities in the cold!  Changing my attitude has made a world of difference.  Not only does winter not seem as long, I actually enjoy it.  I still wouldn’t say that I love it but its no longer dreadful.

Maggie Daley Ice Skating Ribbon Maggie Daley Ice Skating Ribbon

Maggie Daley Ice Skating Ribbon presents a great opportunity to get out and have some fun in the cold. In the past I’d usually skate at Millennium Park.  Comparing the two, I prefer Maggie Daley’s Ice Skating Ribbon hands down.  It’s longer, winding, and offers splendid views of the city’s skyscrapers.

Make sure that you bundle up.  My friends and I seem to always end up going on the coldest days so we’ve learned the art of layering.

 Bucks Cafe Bucks Cafe

Even with the low temperatures, once you get moving, you really don’t feel the cold as much.  It’s so much fun and its nice being outside breathing in the crisp air.

In case you’re in need of a warm-up, Buck’s Cafe, located in the park sells hot chocolate.

You can also pop into the Fieldhouse to reheat.  There are restrooms and lockers located inside.

If you’re looking for somewhere to play outside this winter, give Maggie Daley Park’s Ice Skating Ribbon a try.  Don’t forget to reward yourself afterwards with a yummy Chicago deep-dish pizza!  I live for that!
